Welcome to our very first “Vegetable of the Month!” In January, we’ll be focusing on bright, crunchy carrots. Whether you prefer them raw for a snack or cooked into a cozy soup, carrots are a fantastic winter veggie. Children love their natural sweetness, bright orange color, and that satisfying crunch!

This month’s recommended children’s book is Too Many Carrots by Katy Hudson (purchases made through our Amazon links help support Common Ground Childcare). It follows a fun-loving rabbit who can’t stop gathering carrots—until they start to take over his home and crowd out his friends. Kids love seeing how Rabbit’s love for carrots leads to a bit of chaos (and a valuable lesson about sharing).

Here are some kid-approved carrot recipes you can try:

  1. Creamy Carrot Soup – Puree cooked carrots for a warming lunch.

  2. Carrot Cake Muffins – Add some cozy spice and top with a little cream cheese drizzle.

  3. Carrot “Fries” – Roast carrot sticks with olive oil and a pinch of salt.

  4. Rainbow Carrot Ribbon Salad – Shave colorful carrots into ribbons; top with raisins or cranberries.
